Finka Table & Tap's First Pop-Up PROOFREAD Is Hitting Town In A Speakeasy Kind Of Way

You know who Midas was and how everything he touched turned to gold? Chef  Eileen Andrade, the owner of Finka Table & Tap and Amelia's 1931 kicks Midas in the butt when it comes to restaurants (or anything food and drink related) for that matter. In her mid-twenties she is creative, determined, talented and has a vision that doesn't fail. 




Her latest venture, PROOFREAD, is a hidden, sexy, laid-back speakeasy, serving up classic cocktails and signature small bites. Library-themed, the concept will provide an intimate setting with live entertainment in the west part of Miami and Kendall, an area not too many associate with trendy spots and good food.




Yet Chef Andrade is quickly changing that. Her restaurants have become a staple in the neighborhood, with loyal guests driving the distance to taste her Cuban, Peruvian and Korean fusion. She hopes PROOFREAD will  also make a mark in this part of town, and give patrons a good spot to relax, unwind and enjoy some era-inspired cocktails with friends.



I had the opportunity to attend PROOFREAD's first night and I loved it. The ambiance was perfect, the lighting on point, and every cocktail told a story of a different time and place. It was difficult not to feel a connection with that time. And of course, the famous "croquetas" we all know and love made a special appearance. Just that in it and takes everything up a notch.
