COCHON555 Is Back in Miami And You Don't Want To Miss It

Cochon555 is excited to add more names to an already stellar lineup. Notable judges and celebrated somms will take part in the competition to find one chef who will be crowned for their whole pig cookery skills. The event, set to take place in Miami at The Biltmore Hotel, offers guests a unique way to sample food cultures near and far, putting the focus on a safer, more honest food system. National in scope, the culinary tour will go to nine cities in 2019. The event also benefits a greater – and absolutely delicious – cause in the form of Piggy Bank; a farm-in-the-making devoted to sharing free heritage breed genetics with small family farms. This year’s competing chefs include Jorgie Ramos of BARLEY, Karla Hoyos of The Bazaar by Jose Andrés, Fernando Desa of Goya, Daniel Bouza of PokéBao and Jimmy Lebron of 27 Restaurant & Bar. The chefs prepare boldly flavored dishes in this friendly competition using whole heritage breed pigs from family farms in a nose-to-tail, whole animal showcase. A crowd of a few hundred pork-loving gourmands and fourteen notable judges will score each chef on utilization, global influences, cooking techniques, overall flavor, and the “best bite of the day.” This year’s fourteen notable judges include a lineup of local luminaries such as Chef Brad Kilgore of Alter, Chef Aaron Brooks of Edge Steakhouse, Gio Gutierrez of ChatChow TV, Chef Jose Mendin of La Placita, as well as the headline all-star butcher, Andres Barrientos of Miami Smokers.

Additionally, running in tandem with tour are a pair of internal beverage competitions. Punch Kings presented by El Tesoro Tequila (video), features five of the city’s top barkeeps facing off in a whole-bottle punch bowl competition, challenging them to each make a large-format communal libation prepared with El Tesoro Tequila. Competing this year are Arleen Delima of Repour, William Mendez of Abi Maria Bar & Refuge, TJ Palmieri of Madrina’s, Richard Mejia of The Broken Shaker and Emiliano Gonzalez of Casa Florida. Cochon555 also challenges five celebrated sommeliers in the “Somm Smackdown presented by Wines of Bordeaux and Germany” (video) to use every bit of their accumulated knowledge and inspiration to find the best wine to pair with the dishes prepared by competing chefs. This year’s somms include Kirsta Grauberger of FallBall Group, Daniel Toral of 50 Eggs Hospitality Inc., Joseph Gewarges of Fontainebleau Miami Beach, Jen Schmitt of Zuma and Jacqueline Coleman of Biscayne Times/Miami Girl Magazine/Let’s Eat Magazine/Coravin/Wine Lifestyle.

Dishes for the competition are just the beginning -- all in, we’re talking about 1,500 pounds of responsibly raised heritage breed pork. Guests will enjoy innovative preparations and cocktails from some of the most critically-acclaimed kitchens and bars in Miami. Citi cardmembers will start the evening with an exclusive welcome bite from Chef Adrianne Calvo of Chef Adrianne’s Vineyard Restaurant and Wine Bar. Guests start the event by exploring our signature Cheese Bar curated by Florida Dairy Farmers. Sip sparklers from LaCroix Sparkling Water, enjoy cold brews from Guinness paired with a special bite by Chef Demetrio Zavala of Shula’s Steak House, hard ciders from Angry Orchard, inventive cocktails from Wheatley Vodka with Perfect Puree of Napa Valley, Diplomático Rum and Santa Teresa Rum and enjoy the Manhattan Project featuring premium bourbons from Eagle Rare and Buffalo Trace topped with Luxardo cherries. Sample neat tastings from Whiskey Five featuring Bulleit Bourbon, Johnnie Walker, Crown Royal, Singleton, Buchanan and more. Placing the spotlight on “knowing where your food comes from", the event will feature an educational whole animal butchery program called the Pop-Up Butcher Shop and Silent Auction with gifts from chefs, sponsors and John Boos & Co., to benefit our sister charity, Piggy Bank.
